Instructions
Step 1 – Make the Pastry Dough Mix cake flour, butter, and salt together. Use a bench scraper to cut the butter into the flour until pea-sized. Add beaten egg and cold water, then knead into a dough. Wrap in plastic film and refrigerate for at least 30 minutes to 1 hour.
Step 2 – Line the Tart Pan Remove the chilled dough and roll it out thin. Press into the tart pan, trim excess edges, and prick the bottom with a fork to prevent puffing. Place on the 3rd rack of the StoviQ and bake for 13 minutes.
Step 3 – Sauté the Filling Cut squid, mushrooms, and potato into uniform pieces. Season with salt, pepper, and white wine. Place on the 2nd rack and roast for 5 minutes until cooked through and lightly colored.
Step 4 – Prepare the Custard Whisk 6 eggs with heavy cream and grated parmesan until smooth and well combined.
Step 5 – Fill & Bake Place the sautéed filling into the pre-baked crust. Pour in the custard until about 80% full. Top with shredded cheese. Place on the 5th rack of the StoviQ and bake for 15–18 minutes until the custard is set, then move to the 2nd rack for a final 2 minutes to brown the top.
Tips
- Adequate chilling time is key for a crisp, non-shrinking crust
- Don't overfill — leave space for the custard to puff slightly
- Always pre-cook the filling to ensure everything is fully cooked inside the quiche
