Instructions
Step 1 – Caramelize the Onions Slice onions and cook over low heat until deep golden brown and caramelized. Set aside to cool.
Step 2 – Marinate & Roast the Beef Coat flatiron beef evenly with marinade. Place on the 1st rack and roast for 3 minutes, flipping halfway, until both sides are nicely browned. Remove from oven, wrap in foil, move to the 4th rack, and continue roasting for 15–20 minutes until the internal temperature reaches 65°C.
Step 3 – Toast the Bread Spread salted butter on both sides of the thick-cut bread. Place on the 2nd rack and bake for 1 minute until the bread is lightly golden and crisp. Set aside.
Step 4 – Prep the Peppers Finely dice the red and yellow bell peppers. Set aside.
Step 5 – Assemble the Sandwich Layer one slice of toasted bread with sliced beef, caramelized onions, diced peppers, cheddar cheese, and shredded cheese. Return to the oven just until the cheese melts, then top with the second slice of bread and serve.
Tips
- Marinate the beef overnight for deeper, more developed flavor
- Onions should turn deep brown — light golden isn't caramelized
- Dice the peppers finely so they distribute evenly in every bite
